Jason K. Apple grew up on a small ranch in southwestern Oklahoma, where he was involved in raising beef cattle and market hogs. After receiving his B.S. degree in Animal Science from Oklahoma State University, Jason continued his education at Kansas State University, obtaining his M.S. and Ph. D. degrees in Animal Science, with emphasis in Meat Science. Dr. Apple has served on the faculties in the Department of Veterinary and Animal Sciences at the University of Massachusetts-Amherst (1993-1995) and the Department of Animal Science at the University of Arkansas (1995-2019). His research endeavors have been focused on the factors affecting pork and beef quality, but he has also conducted a number of animal behavior/well-being experiments. To date, Dr. Apple has mentored 17 M.S. and Ph. D. students, received in excess of $1.5 million in research funding, and published 88 refereed articles, 171 scientific abstracts, and 5 book chapters. The American Society of Animal Science recognized Dr. Apple’s research accomplishments with the 2008 Meats Research Award, and he served as President of the Midwest Section. Dr. Apple is a third-generation teacher and is excited that he will continue interacting with students as Chair of the Department of Animal Science and Veterinary Technology Department.
